    We’re celebrating comfort all month long at The Dansko Blog! And we can’t celebrate comfort without spotlighting the grand appeal of comfort food. This week, our B Corps friends at Cabot CheeseKing Arthur Flour, and Madhava Sweeteners join our celebration by sharing some of their favorite comfort food recipes!

    There’s no bigger celebration of comfort food than Thanksgiving dinner. From dinner rolls to dessert, America’s homegrown holiday is a parade of recipes that aim to please. And the best part of it all – the leftovers!

    As much as we enjoy serving traditional dishes, we also love welcoming new comfort foods to the table. This Thanksgiving, if you’re looking for new recipes, clear some room on the table for these can’t miss creations from our friends at Cabot Cheese, King Arthur Flour and Madhava Sweeteners!

    • Four Great Comfort Food Recipes for Thanksgiving!  -

      Big Batch Quick Dinner Rolls

      ​Thanksgiving feasts can’t start without a basket of delicious dinner rolls. These easy-to-make dinner rolls, a comfort food favorite from our friends at King Arthur Flour, are sure to get your meal off to the perfect start!

      Ingredients

      • 1/2 cup lukewarm water
      • 2 cups warm milk (100° - 110° F)
      • 3 tablespoons butter
      • 2 tablespoons sugar
      • 1 tablespoon salt
      • 2 1/2 tablespoons yeast, instant preferred
      • 6 to 7 cups of King Arthur Unbleached All-Purpose Flour

      Directions

      • Combine the water, milk, butter, sugar, salt and yeast in a large bowl, or the bowl of your stand mixer. Stir well and let sit for 6 to 8 minutes, or until you see the yeast begin to foam.
      • Add 5 cups of flour and mix by hand or with the paddle attachment until the dough forms a rough, shaggy mass. The dough will not form a ball at this point, but will be just shy of coming together.
      • Add flour, 1/2 cup at a time and blend with the dough hook until a smooth ball begins to form. Knead by hand for about 10 minutes, or by machine for 4 to 5 minutes until a soft, smooth ball of dough is formed. The dough should feel elastic and slightly tacky to the touch.
      • Lightly spray your work bowl with cooking spray and place the dough in the bowl. Spritz the top of the dough with spray as well and cover lightly with plastic wrap or a shower cap. Let rise for 20 minutes at room temperature or until the dough is full and puffy.
      • Gently deflate the dough and pat out to a rough rectangle about 8 inches by 12 inches. Cut the dough into 4 long strips, then cut each strip into 6 portions for a total of 24 dough balls. Shape into round balls as you would shape meatballs, using your cupped hands to roll the dough. Spritz your hands with cooking spray to prevent sticking.
      • You can place the rolls into any of the following pans, well-greased or lined with parchment paper: One half-sheet baking pan or 2 quarter-sheet pans. Two 13" x 9" x 2" pans. Four 8" or 9" round baking pans OR a combination of any of these pans.
      • After the rolls are in the pans, cover again with your plastic wrap and let rise at room temperature for another 20 to 25 minutes, or until well rounded and full looking. If you are baking now, preheat the oven to 350°F.
      • Bake the rolls for 20 to 25 minutes or until golden brown and an internal thermometer reads 190°F. You can brush the baked rolls with melted butter if desired. Serve warm, store leftovers in a plastic bag for up to 3 days.
      • If you want to freeze the unbaked buns, place in the pans as described in step 6 and allow to rise for 10 minutes. Wrap airtight and freeze for up to 4 weeks. To bake, thaw overnight in the fridge, then unwrap and bake as directed.

      ​​​​​​​​​​​​​​​​​​​​​​​​​Au Gratin Potatoes with a Cheddar Stout Sauce

      Inspired by a recipe from one of Cabot Creamery Cooperative’s farm family owners, this delicious side dish not only incorporates tasty Cabot Sharp Cheddar and premium Cabot Unsalted Butter, it also calls for unbleached all-purpose King Arthur Flour.

      Ingredients

      • 3 medium baking potatoes (about 2 lbs.), peeled and thinly sliced
      • 3 tablespoons Cabot Unsalted Butter
      • 1 teaspoon chopped fresh thyme
      • 1 medium onion, finely chopped
      • 3 tablespoons King Arthur Unbleached All-Purpose Flour
      • 1 teaspoon salt
      • 1/2 cup dark beer, such as stout or porter
      • 1 1/2 cups milk
      • 1/2 teaspoon freshly ground black pepper
      • 8 oz. Cabot Sharp Cheddar, shredded (about 2 cups)

      Directions

      • Preheat oven to 375°. Lightly grease an 11- x 7-inch baking dish with cooking spray.
      • Arrange potato slices, slightly overlapping, in prepared dish.
      • Melt butter in a medium saucepan set over medium heat. Add thyme and onion; cook 4 minutes or until onion is tender and golden, stirring occasionally.
      • Stir in flour and salt. Cook, stirring constantly, 1 minute or until flour is golden; whisk in beer. Increase heat to medium-high. Bring mixture to a simmer; simmer, whisking constantly, 2 minutes. Whisk in milk, and cook, whisking constantly, 3 minutes or until slightly thickened.
      • Remove pan from heat. Stir in pepper and 1 1/2 cups cheese. Pour cheese sauce evenly over potato slices. Cover and bake 45 minutes or until potato is tender. Top with remaining 1/2 cup cheese. Bake, uncovered, 5 more minutes or until cheese is melted and bubbling.

      Rustic and Unrefined Apple Tart

      ​The perfect way to wrap up a Thanksgiving feast is with a delicious dessert! The fine folks at Madhava Sweeteners recommend serving this new take on a classic dish to your family and dinner guests.

      Ingredients

      Crust:

      • 1 1/2 cups of walnuts
      • 1 tbsp. of coconut oil
      • 1 tbsp. of Madhava Organic Pure & Raw Honey
      • 1/2 tsp. of salt

      Filling:

      • 2 apples
      • 1/4 cup of Madhava Organic Coconut Sugar
      • 1 tsp of lemon zest
      • Juice of 1/2 small lemon

      Directions

      • To assemble the crust, lend all crust ingredients in a food processor and press firmly into a 6″ tart tin with a removable bottom.
      • To assemble the filling, first slice apples thinly with a sharp paring knife (A mandoline is not necessary here, but would be helpful). In a bowl, mix apple slices and remaining ingredients until apples are nicely coated. Arrange in a pleasing pattern on top of crust.
      • Bake at 375° for 40 minutes, or until crust has browned and apples are very tender. Let cool for 10-15 minutes before serving.

      Cranberry Bourbon Martini

      ​After the leftovers have been packed up and the last dish has been washed, you’ll probably want to find a comfy spot in the living room and unwind with a soothing beverage. Our friends at Madhava Sweeteners have the perfect solution!

      Ingredients

      • 1 oz. of Madhava Organic Light Agave
      • 4 oz. of Unsweetened Cranberry Juice
      • 2 oz. of Bourbon
      • Fresh Cranberries

      Directions – Serves Four

      • Add ice to cocktail shaker.
      • Add cranberry juice, Madhava Organic Light Agave, and bourbon
      • Shake well
      • Pour through a strainer into chilled martini glasses
      • Garnish with cranberry skewer or cranberries on top
